So, today is officially the final day of Christmas and if you haven’t quite got your diet back on track yet now is the perfect time to draw a line in the sand. I find Friday tends to be the day where our good resolve dwindles so have decided to share some #FakeawayFriday recipies with you. First up is Tortizzas (pizzas made with tortilla wraps) a real winner with himself and given that its Nollaig na mBán I may even convince him to make them for me for dinner 😆.
Ingredients:
Pasata
Balsamic Vinegar
Dried Oregano
Wholegrain Tortilla Wraps
Mozzarella Cheese (grated or freshly sliced)
Toppings of your choice – sweetcorn, peppers, mushrooms, ham, chicken, turkey, fresh herbs, onion etc.
These are super easy and fast to make and are a brilliant way to get the kids involved in the kitchen also. When you are trying to be healthy the quality of ingredients is important – it doesn’t always have to be the most expensive item but reading labels is essential so you can opt for ingredients with lower salt, sugar and saturated fat. Jarred pasta and pizza sauces will not make this a healthy option so beware!!
Method:
- Prep your toppings – cook meat and required veggies and slice and dice everything else. For healthier options avoid pepperoni and salamis which have higher saturated fat and sodium than other meats such as chicken, ham, turkey and ground beef. Preheat your oven.
- Next pop your wraps individually onto the oven racks to allow them to crisp up. While waiting for these pour your passata into a bowl (we use about 50g passata per tortizza) and add in your oregano, black pepper and a few splashes of balsamic vinegar to give the sauce a bit more depth. I taste as I make this until it’s just to my liking. You can also add a drop of honey or agave if you find the passata too bitter.
- Take out your wraps which should be crisped but not browned and if you need to do more pop them in now. On your prepped wraps spoon on the sauce and spread evenly across the tortilla leaving about 2cm free around the edges. Now for the fun part each person gets to pick their favourite toppings and load it up. If you need inspiration a regular favourite of mine is simply fresh basil, mozzarella and chilli flakes. Be careful not to overload them as the tortizzas are not as strong as a regular pizza base!
- Place back in the oven for 10-15 minutes and hey presto.
